I take a pork sausage, poke some holes in it with a fork to let someone the fat cook out and brown it in a heavy pot over low heat to create some nice browning in the bottom of the pot for flavor. Remove the sausage to the cutting board and slice. Clean the leeks good and slice the white parts thinly . Add the leeks to the pot with a little butter and sweat them a bit. Add a half a small onion diced to the pot with the leeks. When the leeks and onion have lost their moisture add a carrot that has been shredded on the big holes of a box shredder to the pot along with some minced garlic. Cook a bit and then add a couple of cups of good chicken stock to the pot. Add the sausage back to the pot and bring to a low simmer. Peel and dice a couple of russet potatoes and add them. Cook for about half hour to let the potatoes start breaking down to thicken the soup. Thin skinned potatoes will not break down. Add some thyme, salt, and pepper. Make corn bread.
Be careful when you taste it because your tongue might jump out of your mouth and slap your brains out.

My Wife bought an a$$-pocket full of boneless, skinless chicken breasts so I had to find a recipe to make something juicy out of it. https://cafedelites.com/oven-baked-chicken-breast/
I simplified the recipe a bit and extended the cook times to account for the large breasts my Wife picked up.
- Preheat oven to 425 F (390 F for Convection)
- Pound chicken breast with meat hammer or rolling pin to 0.8" / 2 cm for even cooking
- Combine 2 Tbsp. brown sugar and 2 Tbsp. blackened seasoning and sprinkle on chicken in baking pan lined with parchment paper
- Drizzle chicken with olive oil
- Bake to 165F (about 20 - 25 minutes)
- Broil without parchment paper for 2 - 3 minutes to brown to golden
My Wife kept asking if it was pork, it was good.

a friend brought by two dozen oysters today, so, oysters on the half shell tonight for an appetizer. (Tomorrow the second dozen become an oyster stew. ) Dinner was beets and the last of our eggplants in a casserole with walnuts, onion, and mushrooms served over penne and topped with ricotta.

Short Ribs of beef browned off with bacon, onions and garlic and braised in red wine and chicken stock. Cooked 2 hours in a dutch oven then I added carrots, celery, more onions and potatoes and cooked 2 more hours. Fatty to be sure but melt in your mouth goodness. Hope everyone had a good Thanksgiving.

leftover tabbouleh, falafel, and pita bread, squash pie sans-crust with raspberry sauce. We have a tradition of having solstice meals with mostly home-grown vegetables. Not much left in the garden except some kale, bunching onions, winter-hardy lettuce for an early spring crop, and garlic.

Cooking a mango chutney glazed duck, basmati rice pilaf with dried fruits and almonds, and a roasted pineapple salsa today. Plus a wilted escarole salad with a hot bacon and balsamic vinegar dressing. The escarole is from our garden. Notice we got bacon!!

Well I know a ham. Only because I made them set it out. Hopefully someone will take it upon themselves to open a can of green beans. Never been on a boat where the guys are fine having a bologna sandwich for Christmas.
