Brickley family recipe. Don't get me wrong, they're really good tasting. But the thing that puts them over the top for me is that texture. It is my new favorite food.
One diversion that I make is that I put them over the hot coals for about 30 seconds per side to get the little char on them.

Just started marinating 10 more tonight. Keeping this train rolling.

Bell pepper sammiches. Cut a red bell pepper in half and deseed. Cover both sides in everything bagel mix. Add ghost pepper salt to one side. Top with gouda, extra shark cheddar, smoked ham and some romain. This is going to be my new go-to bread replacement.

I didn't proof read very well. I put a layer of cream cheese on each side to make the seasoning stick.

Rode 2 hours to get here. 7/10. The sides are incredible but the meat is too dry, should have just ridden to Patrick’s instead.

I’ve learned that if you’re going to eat at a bbq restaurant try to go as early as possible. Most don’t continuously smoke meat through the day. They smoke what they think they’ll need and have it ready by opening. Then it spends the rest of the day being kept warm and drying out.
