Chile Verde, no beans, browned pork shoulder chunks, onions, garlic, cumin seeds, roasted and peeled Poblanos, dried Pasilla Negro, Ancho and Guajillo chiles, tomatoes, chicken stock. In a cast iron dutch oven simmered two and a half hours. We had it with Jasmine rice. Some heat with a lot of flavor.

Bratwurst, leek, carrot, onion, celery and potato soup with cornbread. Good for a cold night .

They came out really good. Elk has enough fat content that you can use it for anything that you use beef for.

For Christmas supper we had roasted lamb with garlic and rosemary, garlic roasted potatoes, asparagus. For new year eve tonight I'm cooking a pineapple glazed duck with mid-eastern rice pilaf and roasted and browned asparagus. Tomorrow it's black-eyed peas, collards from the garden and cornbread. A southern good luck supper.

I'll be having some black eyed pea chili tomorrow, our traditional New Years meal, with the football games.

A pot of white beans simmered four hours with onions, celery, carrots, bell pepper, garlic, duck stock and left over duck from New Years supper. Corn bread and coleslaw.

coated with saltine cracker crumbs, butter, lime juice, broiled. So much better right off the boat compared with the smelly restaurant fare, sweet and tender.

The other night...
Thai Pork Ribs with a Tamarind Garlic dipping sauce. Harissa chic peas with crispy shallots

Cheese tortellini and roasted chicken in Alfredo sauce. Spiced with Italian seasoning, fresh minced garlic and dehydrated black garlic. Topped with fresh shredded Parmesan and Romano cheese. Absolutely fantastic this time around.
