I just had a 1 1/4" thick steak. Took 8 minutes a side to cook. Worth it. I can hardly move now.

Hand trimmed medium well center cut chops basted in compound butter, oyster mushroom risotto made with fresh homemade chicken stock, green beans almondine with freshly roasted almonds. Finished with fresh basil from my hydroponic herb garden.

Fvcking kids. That was the best risotto I ever had, and some of the best pork!

Day two of it would be mac 'n cheese but with brussels sprouts and cauliflower instead of mac. Rice on the side. Enough to send the average 6 year old into a dinner table meltdown, lol.

Roasted butternut squash, bratwurst, and black bean chili. I used dried ancho and pasilla negro chiles, cumin seeds, onion, garlic, tomato, and chicken stock to build the chili. Cubed and roasted the squash and added it at the end. With brown rice and a skillet of cornbread.
