Salad Nicoise. More of a technique than a recipe. Take a large shallow bowl and put leaf lettuce in it. Take, marinated potatoes, green beans, cucumbers, hard cooked eggs, olives, cheese, tomatoes and basil, and anything else you have handy and set all the elements around inside the rim of the bowl. I tried to make pastrami but got distracted and forgot about the smoker. Ended up smoking it for 14 hours at 200... The dogs will enjoy their dinner tonight though...

Lost everything in our fridge but the freezer held ok. Going to hit the road to search for a grocery store over in Banner Elk. Hope they are not sold out. We have been eating some strange stuff. Our garden is beat up but we still have chard, lettuce, tomatoes, and zucchini. My world for a bunch of bananas.
Traveled the ten or so miles to Banner Elk and it took 1 hour. The road has been cut by four or five landslides that contained big trees, power poles, and power lines. Single lane mostly with heavy equipment working to repair the damage where the berms are washed out.. All the trees on both sides are busted up and have hanging widow makers. If we get wind the roads will close up again. Found a grocery store that had dry goods. Maybe another week till the fresh stuff comes in. I'll stay off the roads so that the emergency traffic can move. It will be years before things are fixed. Helos are going over our house and landing at the fairgrounds 1/2 mile away. Lots of folks still cannot get out and some are being reached by mule trains. We are lucky, we have power, water, internet, mail, and phones. If I was younger I would be out cutting trees.

Roasted zucchini fritters and fried green tomatoes. Both from our garden. I added a gorgonzola stuffed buffalo burger to my plate.

Beet pickled eggs?
Tacos but I used ground Italian hot sausage instead of ground beef. Seasoned the meat with.taco seasoning.
I highly recommend not trying this. I threw away about 2/3 lb of meat.

Just add more sugar to offset the salt.
