Laid out all weekend drinking and playing cards. Sometime Monday morning after daylight I made my way home, staggered into the house, and before she could say anything I slammed the door looked her in the eye and said “where the hell have you been?”. She never said a word lol.
A couple days later I was warned to not try that tactic again 😂If it don’t bother me, it don’t bother me. Just leave me alone.

Can make this trip but I’ve got Appleton on the calendar for late January / Early February for final inspection of our fire apparatus. Planning on coming in a few days early.

I can roll over 40 hours per year, and it resets every February. Friday brings me from 50 to 42 hours this year, but Saturday would bring me down to 34, which would mean I would lose 6 hours of rollover. Being responsible sucks.

Wings are marinating. Jambalaya going on in the morning as well filleting out the pork tenderloins and rolling them in the bacon lattice. Ended up with a whole brisket for Saturday. Have lots of sides too, potatoes, asparagus, bell peppers, and green beans. Plus a few random other goodies of the meat variety.

Pork, stuffed with pork sausage wrapped in more pork! Not sure how the top picture came out so blurry. They will look better once they firm up in the fridge before they go on the smoker. Running these hot 375-400.

Asparagus with duck fat, chili powder garlic powder and the same Cajun seasoning as the jambalaya to complement.

I never could tie one right anyway lol. The bacon should crisp nicely in place of the skin. I’ll have to give that a try sometime.
