Haiti High Elevation Baptiste:
This Haitian coffee is from CAB, a smaller subset of UCOCAB which is a co-op of co-ops and has over 2000 members. CAB is the highest elevation from all of UCOCAB, so it is the last to harvest in each cycle as a result. The President of UCOCAB, Walter, oversees all coffee processing to ensure consistency.
He has been working directly with our trading partner, Café Kreyol, to ensure sustainability and quality control on the farm and cooperative level. This coffee is Shade Grown which is a rarity in Haiti to have that kind of forest cover. The cooperative is paid roughly 300% higher wages than the Fair Trade minimum, not out of charity, but for having an exceptional product.
Roasting notes: This coffee is enjoyable at any roast. Nutty, and notes of chocolate with some small hints of soft fruit and floral tones at the lighter roast. A medium roast just before the 2nd crack keeps it fuller bodied and smooth.

That green coffee looks surprisingly good for coffee from Haiti. Let me know how it comes out. I tried four different greens from the Dominican Republic a long time ago that were the worst coffee I've ever had.

Visiting my son in Texas for a few days. Thanks to @Pacman84 I found these.
