Not for dinner tonight. We just finished making tomato sauce using Rodger's method. It turned out very, very delicious and was easy. I don't think he will mind me sharing:
Edward, I move the oven rack to the bottom position. Heat the oven to 425. Spray oil on to a sheet pan. Cut the tomatoes in half crossways and place them on the sheet pan cut side down. Roast on bottom rack for 15-20 minutes for small tomatoes a bit longer for large ones.. The moisture will roast out of the tomatoes and they will caramelize bit. When cool put them into a food processor with fresh basil and oregano and buzz them up. The roasting concentrates the flavor and the caramelization adds a ton of flavor.

My first attempt at brisket. 4 hours apple wood smoke, 2 hours wrapped, rest for an hour. Pretty d@mn good for my first effort.
