Jose Andres did a restaurant in D.C. called America Eats. It was only open for a year (by design) and was based on early America recipes. Many of them came from James Hemings cookbook that is in the National Archives.

It was just a post about the airship I saw on my Facebook feed, and I saw what I saw, and I said to myself "I gotta share this with my boys".
