Duck noodle soup. What are you supposed to call it when you make broth out of the carcass? Duck carcass soup?
Depends on how its done I guess. Wife takes the bones and simmers them in a slow cooker for who knows how long. Makes a bone broth then soup. not bad. she then makes soups, or when cooking rice, or other things. Kids called it anything but good since when they were sick she would heat it up for them because of the callogen (sp) and good things in it.
It's the skeleton broth way. Cut off all the good meat once you roast the duck, eat that, save the skeleton and then simmer it with carrots, onions, and spices for a few hours to make a broth. Then strain that to get all the bones and mushy carrots out, and make a soup with it. I guess I can call it bone broth soup?
Our AB distributor didn't order any Bourbon County this year because they're changing ownership. A case of 2021 appeared from who knows where so at least I have that.
