Salad Nicoise. Originally from the sea port town of Nice in the south of France. Basically a large individual bowl of lettuce with pickled vegetables, eggs, cheese, olives, whatever you have arranged around the rim of the bowl with a protein in the center. Historically in Nice it was seafood but here in the US the protein can be any kind of carne.
