Montecristo Monte by AJ Fernandez Robusto, 2nd pot of coffee, an Ethiopian Kochere Konga Abiyot Ageze washed Gr. 1. Roasted to just short of full city, lots of chocolate flavor. This lot was harvested from 60 family farms.
"These beans are coming from family-owned farms in the Kochere district of the Gedeo region of Ethiopia. The Gedeo region is named after the Gedeo people who are indigenous to this area. The Kochere micro-region has long been known as one of the best origins for southern Ethiopian coffee. The combination of very high altitude and iron-rich, acidic soil creates the ideal growing situation to produce the bright, floral Yirgacheffe profile.
Coming from 650 family owned farms. Producers deliver ripe cherries to Abiyot Ageze’s washing station every day during the harvest season. At the washing station coffee is carefully sorted, pulped, fermented, and then washed. The washed parchment is carefully sorted and immediately placed on raised beds, constructed to ensure proper air circulation. Coffee is turned regularly on to prevent uneven drying. After the moisture is reduced to less than 12 percent, the parchment is transported to Addis Ababa to be milled and prepared for export.
Tasting Notes:
A great example of a top rated and clean Yirg coffee. Bright, citrus, floral and soft fruit versus a chocolaty spice note, a bit tea like at lighter roast points. Very dependent on roast, one can accentuate or hide the attributes of this cup depending on roast level. Washed Ethiopians are always way fun to play around with. Lighter quicker roasts are front loaded floral and citrus with a little hint of a chocolaty tone (pretty faint), dark roasts are hefty, a bit fuller bodied with strong bakers chocolate tone and some smokiness.
Roasting Notes:
Most will like this cup best in the medium to just before 2nd crack range (including myself). Balanced, sweeter, cool floral and fruit hints and a nice chocolaty tone than lingers on the tongue. Also very cool at light and dark roasts but way more extreme in its taste characteristics. If you do not like acidity, avoid light roasts. If you do not like a bitter compliment to the cup, do not roast it super dark. Easy to roast for it roasts very even, less chaff and good pretty much anywhere, you just have to know your preference or play around a bit."
