I ride a 1985 Kawi GPz750 That I’ve partially rebuilt and restored. She’s a survivor and has only 19k original miles. I ride mostly with HD’s and V-Twins though with the Colorado Bikers.
Nice! My aging back couldn't handle a go-faster like that. '03 100th Anniversary Road King here. '01 Sporty Hugger for B.

I have degenerative spinal and muscular issues myself so I understand. That said there is some pressure on the wrists but it’s more upright than you’d think which is why I can ride it otherwise my back would nix it. I want to get a Ninja 1000 so I can do some touring and longer rides on it. Slightly sporting riding position but again mostly upright.

I'm just plain old. My RK is 88 Cu In with Stage 1 Screamin' Eagle, which is more than enough power for me. On the 18 mile stretch from Homestead to Key Largo when stuck behind a slow Winnebago, I just crank it in 5th gear and fly around him with no problem. Don't even need to down shift.
The torque on a v-twin is awesome for just that reason. Sounds like you got it made as well as living in an awesome area 😎
We don't have "twisties" in S FL. And our highest point is the hump on the 7 Mile Bridge. Harley got it right on the frame geometry for the '01-'07 Road Kings. They don't handle like my '65 BSA Lightning or my '72 Norton Commando, but they handle well for a big, heavy, comfortable bike.

Some pretty slick older bikes you got there, would love to see pics sometime.
