I read something years ago stating the biggest issue most people have with solar panels is they don't have a way to store the power they are generating. So definitely look into solar batteries. It would allow you to store energy and use it during the night.

I'm not trying to be self sufficient but would like to draw enough from the panels to keep a freezer or 2, maybe a couple lights or boil a little water.

You also have to be able to isolate your system from the grid.

Right, I'm aware of that, like if you run a generator you isolate from the grid.

Yeah, your solar system or generator backfeeds through a transformer and kicks it up from 120 V to 38,000 V or so, not good.
