I'll counterpoint this for you @Krieg, in the interest of the historical record that Bob alluded to.
I have a tower with 8 drawers. All Spanish cedar boards inside. I keep the tower in the 70° range and somewhere in the 60s for humidity. It's been Rock solid, as people know, for the last 3 years. When I open it up, the smell of Spanish cedar hits me in the face. My daughter even says that she loves the smell when I open it. It's very potent.
I have a drawer that is just full of cigars that don't have cellophane. The inter dimensions of the drawer are about 6 in wide by 10 in deep by 4 in tall. I put them in this drawer to cut down the number of times I touch them, which decreases the chances of damage. Most of what ends up in that drawer are Cubans that don't come with cellophane for obvious reasons, a few tats, some tissue lined smokes, a couple of store bought padrons, and some things that I took the cellophane off then decided not to smoke. The drawer is almost always packed.
Last week I smoked a Nat Sherman timeless from @WaterNerd (I think) that I pulled from that drawer. To be fair, he sent it to me with cellophane a while back. I was going to smoke it right away and took the cello off, then decided to smoke something else. It sat in that drawer for more than a year.
I pulled it out last week and smoked it, and it smoked just like every other Nat Sherman timeless I ever smoked, which was just a few, but I didn't detect any notes of Spanish cedar leaching into the cigar. The timeless is a pretty light smoke with less than medium body. Maybe a Connecticut wrapper?
I think it's intuitive to believe that a light smoke with a light body and a shade wrapper is influenced more quickly by its surroundings than some super dark lip buzzer from Nicaragua.
Now before everyone gets their panties in a bunch, it should be said that I wasn't looking for cedar notes. I also can't be completely sure how different it would have been from something in cellophane in a box that was a month old because I just don't smoke these very often.
I guess one way to verify is to take random cigar from a brand out of the box and smoke it, and then find another one that was in my wineador and smoke it right afterwards. Fair.
It'll probably also be said that red cedar has harsher or more pungent leaching of flavors into cigars because of its higher oil content, and that also might be true. But it also might not be true, especially, if all of the faces are completely sealed. While it's true that you will get leeching from the parts that we're not sealed, these parts are also not exposed to the cigars very directly at all.
I'll go out on a limb and be the voice of dissent here, surprise! I will say that the sealed cedar will not impart flavors into your tobacco in any reasonable time frame, say 5 years or 10 years and under. Maybe if you had them in there for the next 40 years the sealant would start to break down and aromas would leech.
However, if you can't smell the cedar when you open the door, it's not getting to your cigars in my opinion.

Looks amazing! As for the smell, I have had my humidor sealed now for 2 weeks, and added some spainish cedar veneer and it smells amazing in there now. Truly smells like my local B&M. IMO, once you seal it, you should be good.
Your walk-in is looking real good! I like that your shelves are not built into place, that you can move them around as you'd like to. That was a smart move @Krieg.

Right now I just have some box opening videos for now...I'm not sure how I feel about doing cigar reviews...imo...taste is relative...very dependent on the palette of the person...so a cigar I think is a dog rocket, someone else may love...so for now, I think I will stick w/ other cigar related/spirit related stuff.
