Had breakfast at 1pm today. 3 egg western omelet stuffed with ground chorizo, linguica and cheddar. Toast on the sade. Barely finished it. After an hour of burping and farting it was time for a much needed nap.

Sometimes I still crave the food I used to eat when I was poor, this was a staple. Broiled (not fried, the rice is chewier when you broil it) leftover rice with a sriracha aioli. Comes out about 80 cents per meal and it’s delicious.
When I was in grade school in the early grades, one of the teachers taught us how to make what she called Popeyes. This dish of an egg fried in a piece of bread has dozens of names, but is comfort food for me. I've since added pepper jack cheese toppings and everything but the bagel seasoning to the basic recipe and I don't bother rubbing butter on the bread first but just melt it in the pan.
Since I was on an early call this morning, I ended up eating later and was hungry. The Wife had fried some eggs and there were only two eggs left, and the pan on the stove so I decided to make the most of it and have this favorite dish.
