Two different rubs, stuffed with beer soaked lemons, onions, thyme, rosemary, and black peppercorns. Bacon under the skin over the breast meat and smoked with white oak until done. Broken down and ready to eat.

Looks awesome. How fast and hot did you smoke them?
Running that hot with wood is hard to keep constant, she never dipped below 375 though. White oak and pecan burn hotter and make it easier to run a much more even temp.
