Yeah, I always use oak when doing chicken since you need the high temp.

Smoked a beer butt chicken, pork loin and beef roast over mesquite all friggin day. Pork loin was a little dry but chicken and beef was perfect, 200 degrees, 6 hours

I find white oak burns more evenly and slightly hotter than red oak, also more keen on the flavor.

Poor Man's Lobster, baked potatoes with cheese, and swiss chard freshly cut from the garden with butternut squash. Turned out pretty good.
