Yeah, I always use oak when doing chicken since you need the high temp.

Smoked a beer butt chicken, pork loin and beef roast over mesquite all friggin day. Pork loin was a little dry but chicken and beef was perfect, 200 degrees, 6 hours

I find white oak burns more evenly and slightly hotter than red oak, also more keen on the flavor.
