Quick easy way for meat cutters to break them down. They use a saw to cut off the cross bone and tenderloin. Then be lazy and not remove the sirloin from the bone and charge for the extra weight.

Choice rib eyes are 17.99 per pound here.
A 2 oz bone portion and an 11 oz meat portion and paying half price for the bone-in price versus the boneless price is a good deal.
