We got a smaller Traeger and have fought it since we got it. The youngest son decided it wasn't good enough, so he bought us this big one. It will flame broil or smoke and it will probably fit an entire Thanksgiving dinner in it.
In Fumo Pax Money can't buy happiness, but it can buy cigars and that's close enough.
Shrimp and Grits. Stone ground white grits cooked with onions, garlic, shrimp stock, and sherry. Shrimp flash cooked in bacon drippings and layered over the grits with chopped green onions from the garden and crumbled bacon sprinkled on top. My other is dairy free so no cheese or cream . Still good eats.

Ajiaco de Pollo, This dish comes from Colombia. It is a chicken, potato and vegetable stew. Chicken, garlic, onion, tomato, gold and white potatoes, fresh corn, cilantro, oregano, smoked paprika, green onions and chicken stock. Good eats.

This week I got weird, but delicious. I’ll call it French onion stew I guess. It’s french onion soup with less water and more ground beef, topped with biscuits. It’s so good, and it gets better as the week goes on while it sits.
Made up a batch of Salsa Rosa. Dry Anchos and Pasilla chiles, roasted tomatoes, roasted onions, roasted garlic, and roasted jalapeños. Chipotles in adobo, and cilantro from the garden. Buzzed up in the blender and great on rice and beans and eggs in the morning.
