I cooked up a bunch of chorizo. Put it in the bottom of muffin tins, covered in cheese with an egg cracked on top. A bit of your rub of choice on top, and low smoked them for about an hour and a half. I've been eating egg cups for dinner for the last few days.

I use to go there but I think they put too much sodium or msg cause it makes me thirsty as hell. I now go to Pho Spot about 500 feet from my house lol Way better

The bbq pork Bahn Me is fantastic! I get it all the time for lunch. Does it justice without having to go to the east side. Not sure about the seafood soup, but I do know some places for that.
The broth, both chicken and beef, is the star of the show at this place. I’m picky about that for Pho places
If we are eating out I've got to drive a hour one way to get Pho so I make it here. We had chicken based pho last night with bean sprouts, cilantro, green onions and mint. The cilantro, green onions and mint from our garden. I have a couple of good Vietnamese cookbooks and stayed true to all the spices when building the stock.
Funny thing is when I was a Marine grunt in Vietnam all we found to eat was C-rations.
