Red Beans cooked four hours with smoked ham hocks and onion, celery, carrots, bell peppers, tomatoes, garlic, miso, and homemade chicken stock. Rice and cornbread.

Chickpea, bratwurst, and kale soup with cornbread. Soup made with onion, garlic, carrot, and celery. Cooked with homemade chicken stock. Cold days- hot soup.

NY strip steak crusted with coarsely cracked black pepper and homemade mac and cheese.

KC Strip, creamy peppercorn sauce, french fries & side salad.
Paired with a nice cabernet sauvignon.

Celeriac and broccoli, chopped liver, and homemade whole wheat crackers seasoned with Za’atar (a blend of thyme, oregano, sesame seeds, sumac and sea salt).

Brined and spiced a chicken yesterday and roasted it today with sweet potatoes. Went out and dug a mess of emerging dandelions. Then I wilted them in a cast iron skillet with a bacon, onion, and balsamic vinegar dressing. Spring tradition.

This one turned out pretty good. I didn’t make it very spicy because of the wife’s company 🙄. But I’ll never turn down good sauce.

Tonight we'll be having cheese and crackers for dinner. I was looking for something cheap, quick and easy. My son had other ideas.

Pepperoni, chorizo, 3 kinds of Salami, garlic and herb cheddar, mild cheddar, Colby, swiss and pepper-jack cheese. Couldn't have just one kind of crackers, either. Garlic and herb Ritz crackers and Everything Ritz crackers.

It was like $50 for cheese and crackers for dinner. Oh, well. At least it will be very good.

I remember good times with my dad where we'd use our pocket knives to slice up a salami and cheese to put on crackers while we sat and enjoyed the music at bluegrass festivals.

We used to do something with our two girls called Snack Supper. Load up a tray with some meats and cheeses, sliced apples and PB, other fruits, sliced veggies and dips, crackers, pickles, olives, etc., then spread out a blanket on the living room floor and eat while watching a movie. Usually on a Friday night. Good times, and our daughters look back on it fondly.
