I wonder how it would be with honey instead of jam? Or waffles instead of a bun? Now I'm intrigued, since I love peanut butter on my waffles, and chicken satay is pretty good. Lots of ideas I might have to try now, thanks!

It was pretty good, I didn't add any cheese to it though I chickened out.

Leek, onion. celery, carrot, potato, and bratwurst soup. Made stock from a garlic and rosemary roasted chicken we had yesterday. Added onion, carrot, and celery when cooking down the stock. Used the stock for the base of the soup. Had it with corn bread made with fresh corn, corn meal and cilantro in a cast iron skillet.

Yep. We make a big pot and let it simmer all day. Leftovers are the best!

My better half had this salad at a nice place, so I recreated for her.
Roasted butternut squash, roasted pumpkin & pomegranate seeds, feta cheese, all sorts of greens with a maple vinaigrette.
Then I made chicken enchiladas with rice and beans. *Wife made the rice.
