Just before wrapping my "poor man's brisket " added a update hardware to the pitboss that makes it into a stick burner! Trying out peacon wood on this one, love the bark i have gotten on it!! Can't wait to taste it when it is done

Colleen is n Dallas, so I took the kids to their favorite place and let them order whatever they wanted. We have leftovers and I’ve been informed I’m in trouble tomorrow. Kids had fun and were/are very happy, I’m ok with being in trouble.
Edit: what Colleen doesn’t know is the waitress was the only one there working the floor and was running around like crazy to make sure everyone was taken care of and happy. When I asked her why she was alone, her response was I’m so sorry I hope I’m doing ok. I tipped her 100% she deserved it and I’m guessing others there didn’t see what I saw, or care that it took a minute longer to have their needs met."We make a living by what we get, but we make a life by what we give". Bratwurst, escarole and Cannellini bean soup with cornbread. Escarole from the garden. The Brats from a local small family farm and the beans from the store. Cornbread in a cast iron skillet.

Decided to step up my work lunches and go the extra mile instead of just making basic sandwiches. Ranch will be added when I eat them.

Cheddar and pork rinds blend it up, thrown into a mini waffle iron. Fresh tomatoes, mozzarella, pepperoni on top and into the toaster oven for 10 minutes.
