First crack at a seafood paella, have to let it rest a few minutes, we'll see.
Edit; rice was a little crunchy around the edges I think because my pan is bigger than my burner but I'll try it again

Leek and Potato Soup with bratwurst, onion, celery, carrot, homemade chicken stock. Had it with iron skillet cornbread with an ear of fresh corn grated in. Overcast, cold day meal.

Homemade taziki, also seasoned with our dill.
Kids got baby Yukon golds also with compound butter.

Last night I made steaks 🥩 and Mexican rice. Instead of using a can of diced tomatoes I used a jar of medium salsa. Excellent.

Wife and I flew to Destin, FL yesterday to celebrate our 20th anniversary. Ate at Boshamps tonight. Blackened gulf snapper with red potatoes, collards, and Worcestershire roasted pecans, hers, and I had pan seared Gulf snapper with linguine and spinach. Appetizer was Bienville oysters. Wish I could share a photo but... Maybe tomorrow it'll upload.

Ro and I are actually considering the same, retiring here. We've a few more destinations to look at as well as come here in summer to see what the conditions are. Pan fried flank steak, smashed small Yukon Gold potatoes, and steamed broccoli. Cut the med rare steak thin on a bios, boiled the small Golds then smashed them to about 1/2 inch on the board and roasted them with carrots, onions, and mushrooms.
