High heat first skin side down to start. flip when slightly charred (not burnt). When non-skin side is the same move to low heat to finish. I sometimes will flip back to skin side high heat when it is done to give the skin a little more crisp before serving. be careful not to burn.

I'm a simple man and set the pellet grill for about 350F and give it about 75 minutes skin up with the cover on while smoking a cigar before checking for 165F. Skin is crisp and meat is juicy.

I got up early in order to squeeze a few extras into my day, before some friends were to arrive at 2pm...
An email came a few days ago saying it was time to renew my plates; upon visiting the DMV's website I found my car needed to be emission-tested before the plates could be renewed. So today I had my car inspected, took about half an hour to get there and back. But the DMV website wouldn't let me renew, so I called to find out why. After a lengthy wait on hold, the nice lady said she could see the test results and that my car passed, but... it was then I realized that the original email was for the plates on the car I sold a year ago. Bingo! Light bulb went on, but not very brightly.
Then I mowed my lawn, and I welled up w/ pride; all my hard work and effort put forth to ignore and neglect my yard are finally paying off... this is no doubt the finest crop of weeds and nuisance plants I've ever had in the 40 years I've lived here. A pat on the shoulder is what I gave myself, I surely did.
That made me think of @TX98Z28 and how he loved his yard. I wonder how he and his new sled are doing.
The three friends all stayed home. But that's how it goes sometimes. I went and bought some bananas instead.
I just learned that my family has been secretly leaving on Tuesday afternoon trips, destination unknown. When pressed, my Wife admitted that they've been secretly visiting the animal shelter to look at dogs. I don't know what to say.

Bigazz storm yesterday into last night… Had a couple trees come down; one across the driveway & one’s across the power line between the last pole & the house. Power company is saying maybe they get to it in 2 days, but realistically expect it to be the weekend. No vherfin for yours truly this week…. The driveway one will meet its end in my woodstove.
I'm still troubled by what I did for that Klondike bar...
We are doing a "staycation" all this week. Today we go to a trampoline park, my lower back is already bothering me from playing so much air hockey yesterday at an arcade. I am 12 days away from 36 and I have a bad lower back, a prime example of why even young men should lift with their legs and not their back.

I used to have back problems, started in my early 30's, working in the factory... but now that I'm old, fat, and lazy, the episodes of back pain are almost zero. I guess being retired and able to sit around smoking cigars really helps.

Wife voted for the simple man procedure. Going with that. Now to find out if my no- thermostat simple grill can hold a preferred temp.
And we're off, smoking a Sin Compromiso while the grill does it's simple task.
Grill held steady at 350°, chicken tested done at 45 minutes. I feel so accomplished, lol.
Nice, faster than I thought. I think I set my grill for 350 and it usually cooks at 300 so YMMV. How'd it turn out?
